Ingredients
- 2 teaspoons of extra virgin olive oil.
- 1/4 cup finely chopped broccoli.
- 1/4 cup finely chopped spinach.
- One huge egg.
- 1 tablespoon of reduced-fat milk.
- 2 tablespoons of shredded Monterey Jack cheese.
- ⅛ teaspoon salt
- 1 tablespoon of reduced-fat sour cream.
- 1 tablespoon coarsely chopped chives.

Directions
Step 1
Heat the oil in a small nonstick skillet over medium heat. Cook the broccoli and spinach, stirring regularly, until bright green and tender, about 2 to 4 minutes.
Step 2
Meanwhile, combine the egg and milk in a small bowl. Pour the mixture into the pan and swirl to incorporate with the veggies. Cook, turning the pan and allowing the egg to flow under the sides, until it forms a thin, uniform layer.
